    [Intro music]

  • 00:08

Gratin Dauphinois is a rich and delicious gratin dish

  • 00:13

made of finely sliced potatoes covered with cream,

  • 00:17

topped with grated Gruyere cheese and baked until browning crispy on the top.

  • 00:23

    This healthy recipe of Savoie,

  • 00:28

located in the French Alpes is easy and

  • 00:32

practical to make as you can cook it in advance

  • 00:34

and reheat it just before serving.

  • 00:37

To make Gratin Dauphinois, you will need a starchy potato,

  • 00:42

today I am using Russet potato because they are very rich in starch,

  • 00:46

    salt, pepper, nutmeg,

  • 00:49

whipping cream- about 33% of fat, gruyere,

  • 00:53

chopped garlic and little bit of butter.

  • 00:57

Pour the cream about 2 cups in a large pot or casserole, add the garlic.

  • 01:02

Season the cream with salt, pepper and nutmeg.

  • 01:24

    Smells wonderful!

  • 01:30

Grate the nutmeg, about a quarter of a whole one.

  • 01:36

Good. Don’t buy ground nutmeg as it will take forever to go through.

  • 01:45

Buy whole ones and grate them when you need them.

  • 01:49

And it will have much more flavour.

  • 01:52

After peeling your potatoes, keep them in cold water

  • 01:55

    to prevent them from browning

  • 01:57

and before slicing them with mandolin, then dry them out.

  • 02:02

Now always use a guard when you are using a mandolin,

  • 02:08

because this is very sharp. You see.

  • 02:11

You want to adjust your mandolin to have about 2mm slices

  • 02:17

which is not measured in inches, ok.

  • 02:19

But probably the thickness of a coin. Ok.

  • 02:22

So like that. Here we go. That would give a good idea how thick you want them.

  • 02:26

    So slice your potatoes.

  • 02:45

So put the potatoes in the cream as they get sliced.

  • 02:50

You can use a knife to slice a potato

  • 02:55

but they wont be as regular as they will if you use a mandolin.

  • 02:58

You can also use a slicer machine,

  • 03:03

but they wont have the same roundness, you know they wont be as regular.

  • 03:11

So cut by a mandolin. Place all the potatoes in the cream.

  • 03:16

And add the remaining cream. Mix well.

  • 03:26

You don’t want to have the potato slices totally covered

  • 03:33

by the cream because otherwise it will be too much.

  • 03:36

Then take the pot to the stove. Bring the cream to a boil on medium heat.

  • 03:40

    Meanwhile, prepare the gratin dish.

  • 03:48

Melt the butter and pour it into the dish.

  • 03:52

    Grease the dish.

  • 03:57

Then if find out you put a little bit too much,

  • 04:05

you could always remove some with an absorbent paper.

  • 04:07

Like so. You don’t want to hand over a very greasy dish

  • 04:14

because it will be rich in gruyere cheese.

  • 04:18

Stir the cream and as you will see, the cream will thicken.

  • 04:22

It is the starch getting to the cream and that will thicken slightly your cream.

  • 04:26

Taste the cream. Not bad. And rectify the seasoning.

  • 04:34

So pinch of more salt and tiny bit more pepper.

  • 04:39

    Stir. Taste again.

  • 04:53

I am going to use the other side of the spoon.

  • 04:57

Excellent! Transfer the potatoes in the gratin dish.

  • 05:03

I am using a skimmer. You may use the serving spoon.

  • 05:07

Arrange the potatoes to make it flat.

  • 05:13

You can see the brown little dots. This is the nutmeg.

  • 05:16

I love nutmeg, it’s pretty strong flavour, but it gives a nice flavour to the dish.

  • 05:22

Then pour some of the cream over.

  • 05:30

Grate the gruyere. Sprinkle the gruyere cheese all over the potatoes.

  • 05:56

So make sure you have cheese everywhere.

  • 06:05

Place the gratin dish on a cookie sheet.

  • 06:16

I like to put some parchment paper under just in case the cream overflows.

  • 06:22

It won’t dirty too much the cookie sheet or the resting tray underneath.

  • 06:26

Bake the gratin dish at 425 degrees F for about half an hour to start with.

  • 06:33

    See you in 30 minutes.

  • 06:40

Its been 30 minutes, let’s have a look.

  • 06:42

The gratins have become golden brown.

  • 06:47

So we turn the temperature to 350 degrees F.

  • 06:51

And we are going to bake it for another 15-20 minutes. See you in 20!

  • 06:55

    It’s been 20 minutes, let’s have a look.

  • 07:01

Nice colour. The potatoes are tender.

  • 07:15

Wow! The gratin smells wonderful! It is very appetising.

  • 07:22

Serve it with roasted chicken or

  • 07:24

roasted leg of a lamb or other dishes.

  • 07:26

    Bon appétit!
